Ingredients (serves 6)

  • 1/2 cup honey
  • 3 Small Carrots
  • 3 Small sweet potatoes
  • 4 Small potatoes
  • Olive oil

Method

  1. Wash and cut all root vegetables into sizes you like. Put them in a large casserole bowl.
  2. Pour over honey and coat all vegetables evenly using your hands. Drizzle some olive oil.
  3. Bake under 200C for 45 mins or until cooked.

  • I have never put honey on my roast potatoes or sweet potatoes, must try that next time I am baking some.
